Basic Vinaigrette

Ingredients

  • 1//3 cup olive oil
  • 1/4 cup red wine vinegar
  • 2 tsp dijon mustard
  • 1/2 tsp salt
  • 1/4 cup parmesan cheese
Pour vinegar in a small jar. Add salt and shake vigorously. Add other ingredients and shake well.

Excellent over any salad. Original recipe came with these instructions: shredded iceberg lettuce, 1 cup shredded mozzarella, 1/4 cup julienned salami

Best Vinaigrette

  • 1/4 cup red wine vinegar
  • 2 tsp Dijon mustard
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • 1/3 cup olive oil
  • 1 cup shredded parmesan
In a jar, dissolve Dijon, salt and pepper in vinegar.

Add olive oil and parmesan and shake well.

Do not refrigerate.

Blue Cheese Dressing

  • 1/2 c. mayo
  • 1/2 c. sour cream
  • Buttermilk
  • crumbled blue cheese
Blend mayo and sour cream. Add blue cheese to taste. Add buttermilk to thin to right consistency

Blue Cheese Vinaigrette

  • 1 garlic, chopped
  • 1/2 tsp. dried oregano leaves
  • 2 tsp. sugar
  • 2 Tbls red wine vinegar
  • 1/4 cup olive oil
  • 1/4 cup blue cheese crumbles
  • salt/pepper
Combine garlic, oregano, sugar and vinegar in a small bowl. Add oil to dressing in a slow stream and mix with a whisk or fork. Stir in blue cheese. Salt and pepper to taste.

Chef Howald's Dressing

  • 1 tbls. sugar
  • 3 tbls. Chef Howell's seasoning
  • 1 tsp. garlic powder
  • 3 tbls. white vinegar
  • 4 tbls. water
  • 4 tbls. salad oil
Mix sugar, seasoning,and garlic powder in a jar. Add vinegar and shake well. Add water and oil. Shake well. Do not refrigerate.

We like this over head lettuce, cut very small, chopped red onion, chopped greeen pepper, bacon, glazed walnuts, halved grape tomatoes, and blue cheese crumbles.

Dee's Vinegrette

  • 1/4 c. lemon juice
  • 3 tbls. of grated parmesan
  • 2 tsp. whole grain coarse mustard
  • 1 tsp. worchestershire
  • 1 clove garlic, minced
  • salt and pepper to taste
  • 6 tbls. olive oil
Mix lemon juice, parmesan, mustard, worchestershire, garlic, salt and pepper in a small jar. Shake until well blended. Add olive oil. Shake well. Do not refrigerate.

Fabulous Salad Dressing

  • 1/4 c. sugar
  • 1/4 c. red wine vinegar
  • 2 tsp. grated onion
  • 1/2 tsp. salt
  • 1/2 tsp. dry mustard
  • 2 tbls. oil
Mix well and refrigerate. Best served over 2 heads leaf lettuce, walnuts, thinly sliced celery and mandarin oranges.

Favorite Viniagrette

  • 2 tbls. vinegar (red wine, basalmic, white basalmic)
  • 1 clove garlic or shallot, crushed
  • 1/8 tsp. dry mustard
  • 1/4 tsp. pepper
  • 1/4 tsp. salt
  • 3 tbls. olive oil
  • fresh lemon, optional
Disolve salt in vinegar. Add all ingredients except olive oil. While whisking, slowly drizzle in olive oil.

French Dressing

  • 1 can tomato soup
  • 3/4 c. sugar
  • 2/3 c. cider vinegar
  • 1 c. oil
  • 1/2 tsp. salt
  • 1 clove garlic, sliced thin
  • 2-3 drops tobasco
Mix ingredients. Refrigerate. Shake well before using.



Last Minute Dressing

  • c. Miracle Whip dressing
  • 1 tomato, chopped with juices
  • 1/2 – 1 tsp. grated onion
  • salt and pepper
Mix all and refrigerate for 15 minutes.

Mock Ceasar Dressing

  • 1 c. mayo
  • 1/4 c. milk
  • 2 tbls. grated parmesan
  • 1 tsp. pepper
  • 1 1/2 tsp. cider vinegar
  • 1/2 tsp. onion powder
  • 1/2 garlic powder
  • 1/4 tsp. lemon juice
  • dash hot pepper sauce
  • dash Worcestershire
Mix all and refrigerate.

Orange Dressing

  • 1 tsp white wine vinegar
  • 1 tsp salt
  • 1/2 tsp pepper
  • 1/4 tsp orange zest
  • 1/4 cup orange juice
  • 1/4 cup olive oil
  • We like this served over bibb lettuce, red onion, red pepper, pecans, avacados, and orange segments
Dissolve salt in vinegar. Add zest, juice, and pepper. Whisk, while slowly adding olive oil.

Poppy Seed Dressing

  • 3/4 c. sugar
  • 2 tbls. onion juice
  • 2 tsp. dry mustard
  • 2 c. salad oil
  • 2 tsp. salt
  • 2 tbls. poppy seed
  • 2/3 c. vinegar
Whisk all ingredients except oil until sugar and salt are dissolved. Add oil last, beating very slowly with electric beater or whisk. Good on spinach with bacon, water chestnuts, scallions and bean sprouts or Romaine lettuce with avocado.



Roquefort Dressing

  • 6 oz. blue cheese
  • 1 tbls. plus 1 tsp. grated onion
  • 1/2 tsp. Worcestershire
  • 1/4 tsp. salt
  • 1/2 tsp. garlic juice
  • 2 c. Miracle Whip salad dressing
Mix well and refrigerate 3 days. Keeps up to 3 weeks.



Snappy Garlic Dressing

  • 3/4 tsp salt
  • pepper
  • 1 tsp. sugar
  • 3/4 tsp. dry mustard
  • 1/4 cup cider vinegar
  • 2/3 cup salad oil
  • 1 clove garlic, minced
Dissolve salt, pepper, sugar, and mustard in vinegar. Add garlic. Drizzle salad oil while whisking. Shake well before using. Best with bibb lettuce, feta cheese, red onion, butter croutons.

White Basalmic Vinegrette

  • 1/2 c. white basalmic vinegar
  • 1 egg
  • 2 tbls. minced shallots
  • 2 tsp. dijon mustard
  • 1 tsp. salt
  • 1 tsp. pepper
  • 1 c. olive oil
Mix all but oil in a blender.

Add oil slowly until dressing emulsifies. Store in refrigerator.
