Slow Cooker Pot Roast

  • 1 tbls cornstarch
  • 2 tbls water
  • 8 carrots, cut into thirds
  • 2 onions, cut into 4 wedges each
  • 4 small potatoes, cut in half
  • 3 lb chuck roast, trimmed of excess fat
  • 2 tbls Worchestershire
In slow cooker, stir cornstarch into water until smooth.

Add carrots, onions and potatoes. Season with salt and pepper and toss.

Season roast with salt and pepper and place on top of vegetables. Drizzle with worchestershire.

Cover. Cook 6 hours on high or 8 hours on low heat.

Transfer roast and vegetables to cutting board. Pour pan juices through a fine mesh seive, if desired.
