Seafood Relish

  • 1 can whole kernal corn
  • 2 avocados, diced
  • 2 tomatoes, cut into small pieces
  • 1/2 small red onion, finely chopped
  • 2 tbls. finely chopped parsley
  • 2 tbls olive oil
  • 2 tbls lemon juice
  • 1 tsp. coarse salt
  • 1/4 tsp. pepper
In a bowl, add corn, tomatoes, avocados, onion, parsley, 2 tbls oil, lemon juice, salt and pepper. Toss to combine. Wonderful on grilled salmon.
