- 1 can whole kernal corn
- 2 avocados, diced
- 2 tomatoes, cut into small pieces
- 1/2 small red onion, finely chopped
- 2 tbls. finely chopped parsley
- 2 tbls olive oil
- 2 tbls lemon juice
- 1 tsp. coarse salt
- 1/4 tsp. pepper
| In a bowl, add corn, tomatoes, avocados, onion, parsley, 2 tbls oil, lemon juice, salt and pepper. Toss to combine. Wonderful on grilled salmon. |
