Counterfeit Hollandaise

  • 1 c. mayo
  • 2 eggs
  • 3 tbls. lemon juice
  • 1/2 tsp. salt
  • 1/2 tsp. dry mustard
In small saucepan, stir all ingredients together with wire whisk until smooth. Stir over medium-low heat until thick. Do not boil. Serve over vegetables, seafood or poached eggs. Sprinkle with paprika.
