Calypso Cole Slaw

  • 8 cups shredded cabbage
  • 2 cans mexicorn
  • 1 cup chopped onion
  • 1 cup mayo
  • 2 tbls. sugar
  • 2 tbls. cider vinegar
  • 4 tsp yellow mustard
  • 1/2 tsp celery seed
  • 1/4 cup shredded cheddar cheese
Mix cabbage, mexicorn, and onion. Mix mayo, sugar, vinegar, mustard, and celery seed. Add cheddar cheese to dressing. Dressing can be made day ahead. Toss just before serving. Add salt and pepper and serve.
