Mediterranean Shrimp Salad With Orzo

Salad

  • 1 lb. cooked shrimp,
  • 3 tomatoes, diced
  • 3/4 cup imported olives
  • 1 cup diced cucumbers
  • 1/4 cup red onion, diced
  • 1/4 cup red bell pepper, diced
  • 1/4 cup green pepper, diced
  • 3 cups cooked orzo pasta
  • Crumbled Feta cheese, optional

Herbed Vinaigrette

  • 3/4 cup olive oil
  • 1/4 cup white wine vinegar
  • 1 clove garlic, minced
  • 1 tbls. fresh oregano or 1 tsp. dried
  • 1 tbls. fresh basil or 1 tsp. dried
  • 1 tbls. fresh dill or 1 tsp. dried
  • 1 tbls. fresh parsley or 1 tsp dried
Mix salad ingredients early in the day. Toss with 1/2 of the dressing.

Add rest of dressing 15 minutes before serving.

Top with feta, if desired.
