Frozen Pineapple Salad

  • 1/2 pint sour cream
  • 1 tbls. lemon juice
  • 3/4 c. sugar
  • 1/8 tsp. salt
  • 1/2 tsp. pineapple flavoring
  • 1/2 tsp. red food coloring
  • 1 can (9 oz.) crushed pineapple, drained
  • 1/2 c. maraschino cherries, chopped
  • 1/4 c. nuts, chopped
  • 2 medium bananas, chopped
  • 1/2 pint cream, whipped
Combine sour cream, lemon juice, sugar, salt, pineapple flavoring, red food coloring, pineapple, cherries, nuts and bananas. Fold in whipped cream. Pour into muffin tins lined with cupcake papers. Freeze. Makes 16 servings.
