Marinated Tomatoes

Salad

  • 5 tomatoes, sliced 1/4 inch thick
  • 2 tbls. chopped green onion
  • 1-2 tbls. chopped parsley

Marinade

  • 1/2 c. olive oil
  • 2 tbls. red wine vinegar
  • 1 tsp. dry basil or 1 tbls. fresh
  • 1/4 tsp. finely chopped garlic
  • 1 tsp. salt
  • freshly ground pepper
Make dressing early in the day. Pour over tomatoes one hour before serving. Top with green onions and parsley
