Salad- 1 bunch spinach
- 1/2 c. sliced water chestnuts
- 4-5 green onions, chopped
- 1/4 c. slivered almonds, toasted
- 1/2 c. grated Gruyere cheese
Dressing- 1/4 c. red wine vinegar
- 1 tsp. salt
- 1/2 tsp. ground pepper
- 1 1/2 tsp. Dijon mustard
- 1 clove garlic, mashed
- 1/2 tsp. thyme
- 1/2 tsp. basil
- 1/2 tsp. tarragon
- 1 tbls. chopped fresh parsley
- 2 tbls. fresh lemon juice
- 1 tbls. sugar, to taste
- 3/4 c. oil (1/2 olive oil, 1/2 tasteless vegetable oil)
| Dressimg: Whisk vinegar and salt until salt is dissolved. Add remaining seasonings. Whisking constantly, slowly drizzle oil into vinegar.
Just before serving toss greens with dressing. Serve at once.
