Spinach Salad With Vinaigrette Dressing

Salad

  • 1 bunch spinach
  • 1/2 c. sliced water chestnuts
  • 4-5 green onions, chopped
  • 1/4 c. slivered almonds, toasted
  • 1/2 c. grated Gruyere cheese

Dressing

  • 1/4 c. red wine vinegar
  • 1 tsp. salt
  • 1/2 tsp. ground pepper
  • 1 1/2 tsp. Dijon mustard
  • 1 clove garlic, mashed
  • 1/2 tsp. thyme
  • 1/2 tsp. basil
  • 1/2 tsp. tarragon
  • 1 tbls. chopped fresh parsley
  • 2 tbls. fresh lemon juice
  • 1 tbls. sugar, to taste
  • 3/4 c. oil (1/2 olive oil, 1/2 tasteless vegetable oil)
Dressimg: Whisk vinegar and salt until salt is dissolved. Add remaining seasonings. Whisking constantly, slowly drizzle oil into vinegar.

Just before serving toss greens with dressing. Serve at once.
