Black Bean Salad

Salad

  • 1 - 16 oz can corn
  • 1 - 16 oz. can black beans
  • 2 tomatoes, chopped
  • 1 large shallot, chopped
  • 1/4 tsp. dried cilantro

Dressing

  • 3 Tbls. lime juice
  • 3 Tbls. rice vinegar
  • 3 Tbls. peanut oil
  • 1/2 tsp. sugar
  • 1/4 tsp red pepper flakes
Mix dressing ingredients. Pour over salad ingredients. Let stand at room temperature for 30 minutes to 2 hours.
