Pickled Cucumbers

  • 1 c. cider vinegar
  • 1 1/2 tsp. salt
  • 1/2 c. sugar
  • s/p
  • 4 shallots, sliced crosswise
  • 2 English cucumbers, sliced
Whisk vinegar and salt until salt is dissolved.

Mix all and refrigerate overnight. Will last for weeks.
