Salad- 1 lb. cooked shrimp,
- 3 tomatoes, diced
- 3/4 cup imported olives
- 1 cup diced cucumbers
- 1/4 cup red onion, diced
- 1/4 cup red bell pepper, diced
- 1/4 cup green pepper, diced
- 3 cups cooked orzo pasta

- Crumbled Feta cheese, optional
Herbed Vinaigrette- 3/4 cup olive oil
- 1/4 cup white wine vinegar
- 1 clove garlic, minced
- 1 tbls. fresh oregano or 1 tsp. dried
- 1 tbls. fresh basil or 1 tsp. dried
- 1 tbls. fresh dill or 1 tsp. dried
- 1 tbls. fresh parsley or 1 tsp dried
| Mix salad ingredients early in the day. Toss with 1/2 of the dressing.
Add rest of dressing 15 minutes before serving.
Top with feta, if desired. |
