Salad- 5 tomatoes, sliced 1/4 inch thick
- 2 tbls. chopped green onion
- 1-2 tbls. chopped parsley
Marinade- 1/2 c. olive oil
- 2 tbls. red wine vinegar
- 1 tsp. dry basil or 1 tbls. fresh
- 1/4 tsp. finely chopped garlic
- 1 tsp. salt
- freshly ground pepper
| Make dressing early in the day. Pour over tomatoes one hour before serving. Top with green onions and parsley |
