Artichoke, Hearts Of Palm And Spinach Salad

Ingredients

  • 2 bunches spinach, torn in bite pieces
  • 1/2 can hearts of palm, thinly sliced
  • 6 slices crisp bacon, crumbled
  • 1/2 can artichoke hearts, diced
  • 3 tomatoes, cut in wedges
  • 4 green onions, chopped
  • 2 hard boiled eggs, chopped
  • Capers to taste, optional
  • Pimentos to taste, optional

Dressing

  • 1 medium onion, minced
  • 3/4 c. sugar
  • 1/2 c. vinegar
  • 1/3 c. ketchup
  • 1/3 c. salad oil
  • 2 tbls. Worcestershire
  • 2 tsp. lemon juice
Combine all salad ingredients. Chill. Combine dressing ingredients. Sprinkle over salad and toss well. Serves 6-8.
