- 2 bunches spinach, torn in bite pieces
- 1/2 can hearts of palm, thinly sliced
- 6 slices crisp bacon, crumbled
- 1/2 can artichoke hearts, diced
- 3 tomatoes, cut in wedges
- 4 green onions, chopped
- 2 hard boiled eggs, chopped
- Capers to taste, optional
- Pimentos to taste, optional
Dressing- 1 medium onion, minced
- 3/4 c. sugar
- 1/2 c. vinegar
- 1/3 c. ketchup
- 1/3 c. salad oil
- 2 tbls. Worcestershire
- 2 tsp. lemon juice
| Combine all salad ingredients. Chill. Combine dressing ingredients. Sprinkle over salad and toss well. Serves 6-8.
