Salad

  • Iceberg lettuce
  • Romaine lettuce
  • Gr. Onions, chopped
  • parmesan cheese, freshly grated
  • Romano cheese, freshly grated
  • mozzarella cheese, freshly grated
  • provolone cheese, freshly grated
  • croutons
  • bacon, cooked and crumbled
  • red bell pepper slices

Dressing

  • 6 anchovies or 2 tsp. anchovy paste
  • 1 c. white wine vinegar
  • 3/4 tsp. dried oregano
  • 1 1/2 tsp. pepper
  • 1 tbls. salt
  • 2 tbls. sugar
  • 2 cloves garlic, crushed
  • 1/4 c. cornstarch
  • 2 c. vegetable oil

Croutons

  • 6 English muffins
  • 1/2 bottled oil and vinegar dressing
  • 1/4 c. grated parmesan dressing
Dressing: Mix all in blender or processor except oil. Add oil in a slow drizzle until well blended.

Croutons: Brush English muffins with dressing. Cut 1 1/2" cubes. Sprinkle with parmesan. Bake at 350, stirring every 5 minutes for 30 minutes, or until lightly brown.
