Penne Pasta With Chicken And Sundried Tomatoes

  • 3 shallots, peeled and chopped
  • 1 tsp. olive oil
  • 2 whole chicken breasts, cooked, boned, julienne
  • 4 oz. dried tomatoes, chopped
  • 1/2 c. cream
  • 1 1/2 tbls. butter
  • 1/2 –1 tsp. dried basil
  • 3/4 lb. penne pasta, cooked al dente
  • 2 tbls parmesan
Saute’ shallots in oil for two minutes until soft. Add chicken and tomatoes and cook over moderate heat for 5 minutes. Add cream and cook, stirring occasionally, for 5 minutes. Add remaining ingredients, and toss to combine. Serve immediately.
