Eclair

  • 1 lb. graham crackers
  • 2 - 3oz packs. of instant french vanilla pudding
  • 3 1/2 cup milk
  • 8 oz. cool whip

Topping

  • 2 pkgs. nestles liquid unsweetened chocolate
  • 2 tsp. corn syrup
  • 2 tsp. vanilla
  • 2 Tbls. butter, softened
  • 1 1/2 cup powdered sugar
  • 3 Tbls. milk
Butter or spray the bottom of a 9 x 13 pan. Line with whole graham crackers. Mix pudding and milk for two minutes then blend in cool whip. Pour 1/2 of this mixture over crackers, place second layer of crackers and cover with remaining mixture. Place last 1/3 of crackers over mixture. Refrigerate for 2 hours.

Beat above ingredients until smooth and pour/spread over crackers. Refrigerate until served.
