Citrus Cheesecake

Crust

  • 1 1/2 c. graham cracker crumbs,
  • 1/3 c. brown sugar
  • 1/2 tsp. cinnamon
  • 1 tsp. orange peel, minced
  • 1/2 c. unsalted butter, melted
  • 1 tsp. lemon peel, minced

Filling

  • 2 1/2 lbs. cream cheese, room temp.
  • 1 1/2 c. sugar
  • 3 tbls. flour
  • 5 eggs, room temp.
  • 2 egg yolks, room temp.
  • 1/4 c. whipping cream
  • 2 tsp. fresh lemon juice
  • 1 tsp. orange peel, minced
  • 1/2 tsp. vanilla
  • 1 tsp. lemon peel, minced

Topping

  • 1/2 c. apricot jam, warmed
  • 10 strawberries, sliced thinly
  • 3 kiwi, peeled and sliced
  • 1 can mandarin oranges,drained
  • finely chopped nuts
Preheat oven to 425.

Crust: Combine crust ingredients in medium bowl and press into 10 inch springform pan. Chill 30 minutes.

Filling: Combine cream cheese, sugar, and flour in large bowl. Beat until smooth. Blend in eggs and egg yolks, one at a time. Stir in remaining ingredients and pour into chilled crust. Bake 15 minutes and lower oven temperature to 225. Bake until firm around edges, approximately 1 hour. Refrigerate immediately.

Topping: Just before serving, remove cheesecake from pan and place on platter. Brush top of cake with jam. Arrange strawberries, kiwi, and oranges on top, from outer edge to center. Brush jam over fruit. Lightly pat finely chopped nuts around sides of cheesecake. Serves 10.
