White Chocolate Cheesecake

Crust

  • 1/2 c. butter, melted
  • 2 c. Lorne Doone Shortbread cookies, finely ground
  • 1 oz. white chocolate, grated
  • 1/4 c. sugar

Filling

  • 2 lbs. cream cheese, softened
  • 1 1/4 c. sugar
  • pinch of salt
  • 4 eggs
  • 3 oz. white chocolate, grated

Topping

  • 2 c. sour cream
  • 1/4 c. sugar
  • 1 tsp. vanilla
  • 1 oz. white chocolate, shaved
Preheat oven to 350.

For Crust: Combine all crust ingredients in small bowl and press evenly into 10 inch springform pan.

For Filling: Combine cream cheese and sugar, beating with a mixer until fluffy. Add eggs, one at a time, beating with mixer on slowest speed. Add white chocolate and pour into crust. Bake 40-50 minutes. Remove from oven and let cool 10 minutes.

For Topping: Combine sour cream, sugar, and vanilla in small bowl. Spread on cake. Place cake back in oven 10 minutes and the refrigerate immediately. Top with white chocolate shavings before serving. Serves 10.
