Strawberry Schaum Torte

  • 6 egg whites, room temperature
  • 1 c. whipping cream
  • 1/2 tsp. cream of tartar
  • 1-2 c. confectioners sugar
  • 1/4 tsp. salt
  • 1/4 – 1/2 tsp. almond extract
  • 1/2 c. superfine sugar
  • 2 pints strawberries, hulled
  • 1 tsp. vanilla
  • 1/2 c. sugar
Combine egg whites, cream of tartar and salt. Beat until foamy. Add superfine sugar very gradually beating until sugar is dissolved after each addition. Add vanilla and continue beating until stiff peaks form. Spread evenly in a buttered 9 inch square pan. Place in a preheated oven at 425. Turn oven off immediately. Allow Schaum to remain in unopened oven 8 hours or overnight. One or two hours before serving, whip cream. Add confectioners sugar and almond extract. Spread over Schaum in pan and refrigerate. Combine strawberries and 1/2 c. sugar or to taste and refrigerate. To serve, cut Schaum Torte in squares and top with strawberries. Serves 9
