- 1 can creamed corn
- 1/2 can whole corn, drained, keeping 1/3 of the liquid
- 3 beaten eggs
- 1 stick softened butter
- 1/2 c. crushed saltines
- 1 tbls. sugar
- 1 pkg. Jiffy corn muffin mix
- 1 c. shredded cheddar
- 1 tsp. baking soda
- honey
- 1/3 c chopped, drained, pickled jalepenos; optional
| Mix ingredients. Pour into greased 2 qt. casserole (smaller than 9 x 13). Brush top with honey. Bake at 350 for 45 minutes until a toothpick comes out clean in the center.
