Scalloped Cornbread

  • 1 can creamed corn
  • 1/2 can whole corn, drained, keeping 1/3 of the liquid
  • 3 beaten eggs
  • 1 stick softened butter
  • 1/2 c. crushed saltines
  • 1 tbls. sugar
  • 1 pkg. Jiffy corn muffin mix
  • 1 c. shredded cheddar
  • 1 tsp. baking soda
  • honey
  • 1/3 c chopped, drained, pickled jalepenos; optional
Mix ingredients. Pour into greased 2 qt. casserole (smaller than 9 x 13). Brush top with honey. Bake at 350 for 45 minutes until a toothpick comes out clean in the center.
