Salsa- 1 can black eyed peas, with jalepenos if you kind find, drained
- 1 can pinto beans, drained
- 1 can white shoepeg corn, drained
- 1/2 onion, chopped
- 1 cup celery, chopped small
- 1 green pepper, chopped
- 1 red pepper, chopped
Dressing- 3/4 cup cider vinegar
- 1/2 cup vegetable oil
- 1/2 cup sugar
- 1/2 tsp salt
- 1/2 tsp pepper
- 1 tbls. water
| Mix all salsa ingredients. Mix dressing ingredients. Let marinate for several hours. Use a slotted spoon to put in a serving bowl.
Serve with tortilla chips. |
