Salsa

  • 1 can black eyed peas, with jalepenos if you kind find, drained
  • 1 can pinto beans, drained
  • 1 can white shoepeg corn, drained
  • 1/2 onion, chopped
  • 1 cup celery, chopped small
  • 1 green pepper, chopped
  • 1 red pepper, chopped

Dressing

  • 3/4 cup cider vinegar
  • 1/2 cup vegetable oil
  • 1/2 cup sugar
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • 1 tbls. water
Mix all salsa ingredients. Mix dressing ingredients. Let marinate for several hours. Use a slotted spoon to put in a serving bowl.

Serve with tortilla chips.
