Steak Tartare

2 lbs. top round of beef,
cut into 1 inch pieces
1 tbls. capers
1 1/2 tsp. Worcestershire
8 anchovy fillets (optional)
4 tsp. stone ground mustard
or Dijon
2 tsp. salt
pepper to taste
2 large egg yolks
In a food processor, fitted with a steel blade, grind beef coarsely in batches. Add all and blend till well combined but not smooth. Serve with toast points or mini rye bread and sour cream.
