Crabmeat Cucumbers

  • 1 can crabmeat, drained
  • 1/2 tsp. dill weed
  • 1 plum tomato, peeled, seeded, and chopped
  • 1 green onion, chopped
  • 1 tsp. finely grated lemon rind, yellow part only
  • 1/4 c. mayo
  • 1/8 tsp. cayenne pepper (short)
  • 1 cucumber, stripped and sliced 1/4 inch thick
Combine all ingredients except cucumber. Chill for 1 hour to blend flavors. Sprinkle cucumber slices with salt and pepper. Mound about 1 1/2 tsp. of crab salad on each slice.
